This coffee comes from a group of cooperative farmers in India, produced from coffee grown across smallholder farms between 900 and 1150 masl. Rather than coming from a single estate, this lot brings together carefully selected coffees from independent producers, reflecting the diverse growing conditions and coffee-growing traditions found across India.

Coffee in India is predominantly cultivated within the Western Ghats, where coffee farms are often integrated into dense shade-grown environments alongside native trees and other crops. The combination of moderate elevations, tropical rainfall, fertile soils, and natural shade provides a stable growing environment, allowing coffee cherries to mature steadily while developing a rounded sweetness and full-bodied structure.

This lot is composed of several Indian Arabica cultivars, including Selection 795, Chandragiri, Catuai, and Híbrido de Timor-derived varieties. Selection 795 is one of India's most widely planted Arabica cultivars, developed through India's coffee breeding programme and valued for its productivity, rust resistance, and full-bodied cup character. Chandragiri and HDT Catuai are more recent cultivars developed to combine cup quality with improved disease resistance, making them well suited to India's growing conditions.

The coffee is processed using the washed method, where ripe cherries are pulped to remove the fruit before fermentation, washing, and drying. By removing the fruit before drying, the washed process allows the underlying characteristics of the coffee and its varietal composition to come through with greater clarity.

In the cup, this coffee leans towards a fuller and more structured profile, with caramel sweetness, dark chocolate depth, and subtle hints of orange. The combination of lower elevation, traditional Indian cultivars, and washed processing creates a balanced and approachable coffee with a rounded body and clean finish.
