This coffee comes from Tamiru Tadesse Coffee, a specialty coffee producer working in the highlands of Sidama, Ethiopia. Tamiru Tadesse has built a reputation for producing distinctive, high-scoring coffees from some of the highest coffee-growing areas in the country, with a focus on careful harvesting, processing, and lot separation.
Grown between 2400 and 2550 masl, this coffee comes from an exceptionally high-altitude environment. The cool temperatures at these elevations significantly slow the maturation of the coffee cherries, extending the period in which sugars, acids, and aromatic compounds develop within the fruit. Combined with Ethiopia’s naturally diverse coffee-growing ecosystem, these conditions contribute to the pronounced fruit character and floral complexity often found in high-elevation Ethiopian coffees.
This lot is composed of the 74158 variety, an Ethiopian coffee selection developed through the country’s coffee research programme. These selections were identified from Ethiopia’s diverse indigenous coffee populations and selected for their agronomic characteristics and potential cup quality. At extreme elevations such as those where this coffee is grown, the variety is able to express a particularly delicate and fruit-driven character.
The coffee is processed using the natural method, where ripe cherries are carefully selected before being dried whole with the fruit intact. During drying, the cherries are regularly turned to encourage even airflow and consistent moisture removal. Keeping the coffee fruit intact throughout this stage allows sugars and fruit compounds to interact with the seed, building sweetness, body, and concentrated fruit character while the coffee slowly dries.
In the cup, this coffee presents deep black grape character alongside the softer sweetness of white peach. The combination of exceptional elevation, Ethiopian genetics, and natural processing creates a highly fruit-driven cup with concentrated sweetness, delicate structure, and a lingering finish.
