This coffee comes from the Alvarez Family at La Reforma, a coffee farm located in Santa Ana, El Salvador. The farm is part of a region with a long history of coffee cultivation, where volcanic soils, mountainous terrain, and a moderate climate provide favourable conditions for growing specialty Arabica.
Situated between 1300 and 1500 masl, the farm benefits from cooler temperatures and pronounced differences between day and night. These conditions slow the maturation of the coffee cherries, allowing sugars and organic acids to develop gradually. Combined with the fertile volcanic soils of the region, the environment contributes to the coffee’s sweetness, structure, and depth.
This lot is composed of the Red Bourbon varietal, one of El Salvador’s most important traditional Arabica varieties. Bourbon is known for its naturally sweet cup profile and is particularly well suited to the highland growing conditions of Central America. The Red Bourbon grown at La Reforma expresses the varietal through darker fruit, confectionery sweetness, and tea-like structure.
The coffee is processed using the washed method. Ripe cherries are selectively harvested before being pulped to remove the fruit and fermented to break down the remaining mucilage. The parchment is then washed clean before being carefully dried. By removing the fruit before drying, the washed process allows the characteristics of the Bourbon varietal and its growing environment to come through with greater clarity.
In the cup, this coffee presents deep black plum character alongside the sweetness of maple candy, finishing with the structured, delicate character of black tea. The washed process gives the coffee a clean and balanced profile, while the high-elevation Red Bourbon contributes depth, sweetness, and a lingering finish.
