This coffee comes from Hacienda Las Lagunas, one of the Janson family’s signature farms in the Chiriquí region of Panama. Situated at 1,350 masl, the farm benefits from volcanic soils, high annual rainfall, and a cool mountain climate with temperatures ranging from 14–26°C. These conditions allow the coffee cherries to develop slowly, giving sugars and aromatic compounds more time to build within the fruit.

The farm receives around 4,405 mm of rainfall annually, creating a humid and fertile growing environment. Combined with the elevation and volcanic soil, this unique microclimate contributes to balanced cherry development, allowing the coffee to develop depth while retaining clarity and structure in the cup.

Janson Coffee traces its roots back to 1926, when founder Carl Axel Janson began cultivating coffee in Panama after being drawn to the region’s volcanic soils. Today, the estate remains a three-generation family operation, with the Janson family continuing to cultivate and process varieties including Gesha, Catuai, Caturra, and Pacamara across their farms.

For Lot 930, the cherries undergo 72 hours of sealed fermentation, a controlled process designed to intensify fruit aromatics while developing greater depth and complexity. Following fermentation, the coffee is dried slowly on raised beds for seven days, allowing for even airflow and consistent moisture reduction. The combination of controlled fermentation and careful drying results in a clean cup with pronounced fruit character and a silky mouthfeel.

ROASTING SCHEDULE & SHIPPING

We roast our coffee weekly to ensure every order reaches you as fresh as possible. All coffee is roasted in small batches, and you can expect to receive beans that have been roasted within 2 weeks of your order.

We aim to process and dispatch all orders promptly, with your coffee carefully packed to preserve its freshness and quality. Orders are typically processed within 2–3 working days, with delivery times varying depending on the destination.
