Mount Totumas, Panama | 150gm
This coffee comes from Mount Totumas in Panama, produced by the De La Rosa family at an elevation of around 1,900 masl. Situated in the highlands of Chiriquí, the farm’s high elevation and cool mountain climate allow the coffee cherries to develop slowly, giving sugars and aromatic compounds more time to develop within the fruit.
This lot is composed of the Caturra varietal, a natural mutation of the Red Bourbon variety that is widely cultivated across Latin America. Caturra is known for its balanced structure and ability to express the characteristics of its growing environment.
The coffee is processed using the natural method, where the cherries are dried whole with the fruit intact. This allows the coffee to develop greater fruit intensity and sweetness during drying, while preserving the character of the Caturra varietal and the high-altitude terroir of Mount Totumas.
In the cup, this coffee presents notes of apricot, gooseberry, and lemon drops. The combination of ripe stone fruit sweetness, bright citrus acidity, and a distinctive berry-like character creates a vibrant and expressive cup that reflects the unique character of high-elevation coffee from Panama.
