Fazenda Rodomunho, Brazil | 150gm
This coffee comes from Fazenda Rodomunho, produced by Elzi Silveira Faria in the Cerrado Mineiro region of Brazil. Coffee has been part of Elzi’s family for generations, with her family moving through different coffee-growing regions of Brazil before she settled at Fazenda Rodomunho in Rio Paranaíba. Today, Elzi works alongside her sons Rodrigo, Renato, and Thiago, producing specialty coffee with a focus on careful farm management and differentiated lots.
Situated between 1100 and 1200 masl, the farm benefits from the distinct growing conditions of the Cerrado Mineiro. The region's relatively dry climate, defined wet and dry seasons, and warm days create favourable conditions for coffee cultivation and controlled cherry maturation. The combination of elevation and seasonal climate allows the cherries to develop gradually while maintaining the sweetness and structure characteristic of coffees from the region.
This lot is composed of the Yellow Catuai varietal, a Brazilian cultivar developed from Caturra and Mundo Novo. Catuai is widely cultivated across Brazil for its adaptability and productivity, while also producing a naturally sweet and balanced cup. At Fazenda Rodomunho, the varietal forms the foundation for a coffee with a heavier body and deeper fruit sweetness.
The coffee is processed using the natural method, where ripe coffee cherries are dried whole with the fruit intact. The cherries are carefully harvested and dried under controlled conditions, allowing the sugars and compounds within the fruit to interact with the coffee during the drying process. This method helps build sweetness, body, and fruit depth while complementing the naturally chocolate-forward character of the Yellow Catuai. Fazenda Rodomunho's coffees are documented as naturally processed and sun-dried.
In the cup, this coffee presents milk chocolate and prune, followed by a sweet candied grape character. The natural process gives the coffee a rounded body and lingering sweetness, creating a rich and fruit-forward expression of Yellow Catuai.
